Bacon Chicken Skewers

Bacon Chicken Skewers

Bacon is wrapped around chicken and grilled with pineapples and mushrooms with this kebab recipe. The bacon gets nice and crisp while keeping chicken moist on the inside.

1. Cut slices of bacon in half.
2. In a large bowl, combine the soy sauce, vinegar, honey, oil, and scallions. Add chicken and mushrooms and stir.
3. Cover the bowl and refrigerate for at least an hour.
4. When ready to cook, remove chicken from refrigerator and preheat a grill on high.
5. Remove the chicken and mushrooms from bowl (reserving the marinade).
6. Wrap each piece of chicken in a half of a slice of bacon.
7. Secure bacon wrapped chicken by threading onto skewers and alternating each chicken piece with mushrooms and pineapples.
8. Lightly oil the grill so the skewers don't stick. Place skewers onto gril and cook for 15 to 20 minutes, occasionally brushing with remaining marinade and turning.
9. Skewers are done when bacon is crisp and juices of chicken run clear.

Serve warm.

10 large button mushrooms, halved
2 scallions, minced
3 boneless, skinless chicken breast halves, cut into bite sized pieces
225 g sliced bacon
1 (8 oz) can of pineapple chunks, drained
6 metal skewers for grilling
