Bacon Wrapped Cocktail Onions

The crispy and sweet bacon has a surprise onion inside which pops in your mouth after being marinated and grilled.

1. Wrap each onion with a piece of bacon and secure with a skewer by piercing skewer through the bacon and onion.
2. Wrap another onion with bacon and add to the same skewer.
3. Do this with each of the 8 skewers, adding 2 pieces of bacon wrapped onion to each.
4. Add each skewer to a shallow dish.
5. In a small bowl, combine brown sugar, vinegar, and molasses.
6. Pour mixture over skewers and let marinate, refrigerated, for an hour.
7. Grill the skewers for about 20 minutes, turning and basting with marinade frequently. Skewers will be done when bacon is cooked to your liking.

16 large cocktail onions (from a jar)
8 slices of bacon, cut into two shorter pieces
25 g brown sugar
30 mL balsamic vinegar
15 mL molasses
8 small wooden skewers, slightly larger than toothpicks, soaked in water for 30 minutes
