Blueberry Lemon Biscuits

These fluffy and fruity biscuits will melt in your mouth. Make sure you have these on hand so you aren't tempted to buy a fatty, sugary donut on the way to work during the week. They travel well and don't even taste healthy. Get your dose of healthy blueberries while satisfying your sweet tooth.

1. Preheat oven to 200°C.
2. Combine all dry ingredients in a large bowl.
3. In a smaller bowl, combine the wet ingredients (egg, yogurt, butter) and the lemon peel.
4. Add the wet ingredients to the bowl of dry ingredients. Stir to combine.
5. Add in the blueberries and gently combine.
6. By spoonfulls, drop onto a baking sheet that has been greased or sprayed with non-stick cooking spray. You can also use Parchment Paper.
7. You should have about 16 equally sized portions.
8. Bake for about 14-16 minutes. You are looking for a light, golden color.

Using a melon-baller or small ice cream scoop will achieve equal portions.

Can be served hot or cold.

150 g Blueberries (fresh or frozen)
1 carton (240 mL) Lemon Yogurt
1 Egg, lightly beaten (or 60 mL) Liquid Egg Substitute
60 g Butter, melted
5 mL Lemon Zest
