Brunch Bites

These open-faced sandwiches are a great go-to recipe for your next brunch. They are super quick and easy to make, but look elegant. Egg, ham, and cheese sit on top an English Muffin and you don't even need a fork! Serve with Mimosas or Bloody Mary's. Yum!

1. Preheat broiler to high heat.
2. Spread 5 mL mustard over each English Muffin half.
3. Top with 1 slice of ham, folding to fit onto muffin.
4. Top ham with poached egg and a slice of cheese on top of the egg.
5. Set each on a baking sheet and place about 15 cm from broiler.
6. Broil for a couple minutes or until cheese is melted.

Serves: 8 people

Units Ingredients
4 English Muffins, split in half and toasted lightly. (You should have 8 toasted English Muffin halves.)
8 thin slices of deli ham
40 mL Dijon mustard
8 poached eggs (This can be done day ahead of time and stored in the refrigerator in an effort to save time.)
8 slices of Swiss Cheese
