Chicken Avocado Rolls

Avocado is spread onto tortillas, topped with chicken and other toppings, rolled up and sliced into bite sized pieces. This is a great cold appetizer for parties.

1. Pit and mash the avocado.
2. In a large bowl, combine the chicken, corn, cheese, and salsa.
3. Spread about 3 tablespoons of the mashed avocado onto each tortilla, making sure whole tortilla is covered.
4. Spread the chicken mixture onto mashed avocado in an even layer.
5. Starting at one end of each tortilla, roll up tightly like a cigar.
6. Place seam side down onto a cutting board, and slice into approximately 6 equal sized portions.

Serve cold with salsa for dipping.
