Chicken Croquettes

These fried chicken croquettes, are covered in a delicious, creamy sauce. Serve with toothpicks for appetizer sized portions.

1. In a large bowl, combine chicken, 30 g of bread crumbs, celery, onion, 2 mL poultry seasoning, and 75 g of soup.
2. When it is mixed thoroughly, shape into 6-8 croquettes (balls).
3. Refrigerate for at least an hour.
4. Remove from refrigerator and coat each in the remaining 60 g bread crumbs.
5. Melt the margarine in a large skillet.
6. When shortening has melted, brown the croquettes.
7. While croquettes are browning, add remaining soup, milk, and remaining 2 mL poultry seasoning to a small saucepan. Heat over low heat, stirring occasionally.
8. Remove croquettes from skillet when browned on all sides.
9. Serve croquettes with sauce poured over them and toothpicks for serving.
