Cucumber Salsa

This is a refreshing summer salsa featuring the mild taste of cucumbers.

1. Combine all ingredients in a bowl.
2. Cover and refrigerate for at least an hour for flavors to marry.
3. Serve chilled with tortilla chips for dipping.

If you cannot find English cucumbers, use regular ones but seed them first.

2 English cucumbers (seedless), peeled and chopped.
2 tomatoes, seeded and chopped
1 jalapeno pepper, seeded and minced
1 small red onion, chopped
1 clove garlic, minced
30 mL lime juice
10 mL chopped cilantro leaves
3 mL salt
