Honey Puffs

These warm puffs of dough, dipped in honey sauce are heavenly. They are a great kosher dessert or appetizer.

1. Make batter by mixing together yeast, sugar, and half of the warm water (120 mL).
2. Let it rest until foamy, about five minutes.
3. Stir in the rest of the better ingredients (and rest of the warm water) and combine until smooth.
4. Loosely cover the batter with plastic wrap and let it rise for about an hour.
5. While batter is rising, make honey sauce by combining all of the sauce ingredients in a medium sauce pan. Over medium-high heat, bring to a slow boil, stirring until sugar dissolves.
6. Stir down the batter after risen.
7. In a large pan, pour in 4 cm of vegetable oil. Heat until about 190 degrees C.
8. Dip a small spoon into the oil (teaspoon sized), and use that spoon to scoop up some batter and slide into the oil carefully.
9. Do this with as many as you can fit into the pan without being crowded. Batter scoops will puff up and brown.
10. Turn each puff so that it is browned on all sides and crisp.
11. Once browned and crisp, drain on paper towels.
12. Syrup should have cooled by this time. Dip puffs into syrup and let excess drip off. Transfer to a serving dish and sprinkle with cinnamon.
