Toasted Garlic and Tomato Bread

This recipe is like bruschetta with out the messy toppings. Pairs well with red wine. Perfect for mingling at parties.

1. Toast bread either by placing under a broiler for a few minutes or with a toaster oven, until crispy and golden brown.
2. Slice garlic and tomato in half.
3. When bread is toasted, rub one side with the open side of the halved garlic clove.
4. Drizzle half of the olive oil on top of the garlic layer.
5. Follow by rubbing the open side of each tomato half on each slice of bread. Only rub enough so that there is tomato flavor on the bread. Too much can make it soggy.
6. Sprinkle with a pinch of kosher salt, to taste.

Serve Warm

Serves: 2 people

2 slices of whole wheat bread
1 clove of garlic
2.5 mL extra-virgin or regular olive oil (1/2 tsp)
1 small tomato (plum works well)
Kosher Salt, to taste
